Okay, after much searching, the only program I could find that would actually extract the APK-TOOLS.checksum.SHA1 fields from the pax headers in the .apks is p7zip!
I ended up writing a hideous awk script that will try to extract them and associate them with the right file from the raw tar stream, but that's fugly.
What would it take to add command line options to apk to extract headers upon request?
(Read as: How many pitchforks do I need to dodge and what is the policy for feature additions in apk-tools?)
ncopa: Is the APK-TOOLS.checksum.SHA1 header ever actually used anywhere, or does it just exist in the headers for future use? I couldn't find a single place it was actually extracted unless it was writing a protected file and generating a .apk-new.

I will probably solve the problem given enough time; but since you are the one who initially wrote that patch, you have more chances than me to actually fix it fast ;)
